At this point, I can pretty much say that I’m obsessed with making entremets, lol. I’ve been putting together different ingredients to create unique cakes that I think my customers will love. Some made it onto Charming desserts’ menu, and some did not. It takes several attempts, reflection and adjustment after each one, for me to place onto Charming desserts’ cake menu.
What are entremets? This is probably not a term familiar to many. Entremets is a French term, and can often be found in patisseries. They consists of multiple layers, usually with components such as mousse, joconde (almond sponge), gelée, purée, glaze, fresh fruit, etc. They take a long time to make due to the many components, but the different layers are usually made ahead of time before it’s time to assemble the cake. Because of the amount of effort required, the cost of ingredients, as well as their uniqueness, they’re much more expensive than cakes sold in bakeries.
One of the main reasons why I love making entremets so much is that I get to come up with one-of-a-kind cakes that I can truly call my own. Cakes that don’t exist – that’s what motivates me the most. When coming up with a new cake for Charming desserts, I think about what flavours my customers would like, which flavours would go well together, the intensity of each, the texture of each component, and how the cake would taste as a whole. Smooth, crunchy, chewy, and spongy all in one bite – that’s what makes entremets so freakin’ desirable :)
One of my favourite cakes from Charming desserts’ menu is the HK-style milk tea hazelnut cake. This is definitely a cake that doesn’t exist outside of our world. Milk tea is one of my absolute favourite beverages, which is why I wanted to create a cake incorporating it. It’s definitely difficult to make out a strong flavour with milk tea, so I had much tweaking to do before I came up with a recipe that I was happy with. I also loved the crunchy texture provided by the chopped hazelnuts, adding some interest and a little surprise to the mouth. The HK-style milk tea mousse is silky smooth and simply irresistable :D
